THAT'S WHAT I'M DOING! I'M DREAMING BIG!
 
 
In case you didn't get it from the headline, it's football season again! It never really ended in this household as my son trains year round, but I like to dream that I have time off. Yeah right!
 
Anyhoo! I decided that I am not going into this season unprepared. I'm working on making weekly meal plans for us so that we don't end up grabbing something horrible at the last minute and spending more money on it then we should.
 
But because I'm really not much of a "creative cook" I have let other's give me ideas to supplement my meal plan and keep the family from revolting! I believe in giving credit where it is due, so I've included the info from where the meals came from. These meals are dinner only. With school starting up soon there won't be much need for home lunches and I'm pretty sure I'm the only one left who eats breakfast.
 
Also, I have certain diet and budget restrictions. I have Hashimoto's and I limit the pasta to small amounts of gluten free, also with bread. Dear Daughter will not eat pork. So, the only time we can have that is when she's not around. You'll be able to tell by the menu. :)
 
As for budget... I sucked at it this week. $142 (including a few extras, but not pet food). But the good news was that boneless chicken was on sale for $2.99/lb. This makes a huge difference in the budget.
 
TIP: Grocery stores are pretty regular in rotating sales on their meat. Unless there is a holiday, they will usually run it the same week each month. Better to stock up when you can. You can always divide it up and freeze as needed.

WEEK 1 Dinner
Sunday RANCH CHICKEN (MY RECIPE) 4 BONELESS CHICKEN BREASTS, cleaned and in a 13X9 pan. Mix 1 whole bottle of RANCH DRESSING (any kind) with half container of PARMASIAN CHEESE and pour over chicken. Cook for 45 min AT 350 DEGREES. SERVE WITH RICE AND VEGGIES!

Monday BAKED PARMESIAN SHRIMP (HomemadeHooplah.com) and zuchini

Tuesday CROCKPOT CHICKEN AND STUFFING (thecozycook.com)

Wednesday REFRIDGERATOR MEATLOAF: Whatever is in the fridge extra goes into meatloaf. Serve with Mashed potatoes (and a roll, if I'm good on my glutens!).

Thursday SAVORY CHICKEN RICE BOWLS (WALMART.COM)

Friday EAT OUT OR DEFEND FOR YOURSELF :) Yeah!!!!!!!
